Truffle Trivia

There’s fifty different flavour compounds in truffles, there’s only one in truffle oil. That makes it boring for cooking but we’ve found ourselves that truffle oil has a legitmate use. It’s a very good bait for rat traps. — Peter Marshall, truffle grower, Canberra Times interview 2010
